This Authentic Style Spanish Rice Recipe is as good as any that you will get from a restaurant. This recipe was given to my by a friend who is from Mexico and owned a Mexican Restaurant. So, it doesn't get any more authentic than that.

Spanish Rice Ingredients
In a sauce pan, bring to a low boil:
Let simmer for at least 15 minutes so the flavors have time to meld.
While this is simmering you can brown your rice in 2-3 tbs canola oil.
Add liquid to the browned rice
Once the rice is a golden brown color you can pour in the tomato/chicken stock.
Simmer:
Next, cover the skillet and let simmer for 20-25 minutes. Then, turn the heat off and let sit for another 15 minutes.
Now, just fluff with a fork. Then, put it in your favorite Mexican serving dish and ENJOY! Guaranteed to be a hit at your next Fiesta.
Restaurant Style Authentic Spanish Rice REcipe

In a sauce pan, combine the first 6 ingredients and bring to a low boil. Allow it to simmer for at least 15 minutes.
While that is simmering, brown the rice in the oil until it becomes a golden brown color.
Then, pour 4 cups of the liquid into the rice. (If you let the tomato mixture boil for too long, it may cook down and there might not be 4 cups of liquid left. Don't worry! Just add enough water to make it 4 cups. It will be fine.)
Next, cover the skillet and lower the heat to low and let simmer for 20-25 minutes.
Then, turn the heat off and let sit for another 15 minutes.
Finally, fluff it with a fork and your Authentic, Restaurant Style Spanish Rice is ready to eat!
